This was by far my favorite recipe from Christmas. I altered the original recipe a bit and it was delicious. It's light and perfect for the holidays. You must use real peppermint extract it makes all the difference in the world.
Frozen Peppermint Cheesecake
- 2 cups crushed oreo's if you can find them mint oreos are better yet
- 1/4 cup sugar
- 1/4 cup butter, melted
- 1 cup of hot fudge topping
- 1 package cream cheese, softened
- 1 14 oz can of Sweetened Condensed Milk
- 2 teaspoons pure peppermint extract
- 2 cups heavy cream, whipped with 1/2 cup of powdered sugar
- Red food coloring, optional
- Line a 9 inch round springform pan with parchment paper or foil
- Combine oreos and sugar in a medium bowl. Add butter; mix well. Press 2 cups firmily into the bottom and sides of pan. Chill.
- Spread hot fudge over the top of the cookie crumb mixture.
- Beat cream cheese until fluffy in large bowl. Gradually add sweetened condensed milk until smooth. Stir in peppermint extract and food coloring. Fold in whipped cream mixture. Pour filling into the pan.
- Cover and freeze for at least 6 hours or until firm. Garnish with more hot fudge if desired.
