This was my Grandma Anderson's recipe. She made delicious pies. We picked strawberries from our garden this morning and I made a batch of freezer jam. There wasn't quite enough for two batches so I dug out my pie recipe. Maddie told me she didn't know strawberry pie existed. I have a feeling now that she's tasted it, it will be made many more times. It's a very easy recipe for a yummy summer dessert. Enjoy!
Strawberry Pie
- 1 pint box of strawberries washed
- 1 cup sugar
- 2 1/2 Tbsp cornstarch
- 1/4 tsp salt
- 1 Tbsp lemon juice
- 1 pint of strawberries addtional to mix in and put on top of the pie
Mash your strawberries with a potato masher. You don't want them too fine but just kind of chunky with a bit of juice. Mix them into a saucepan with the sugar, cornstarch, and salt. Cook on top of the stove over medium heat until the mixture thickens and is clear. Add about 1/2 the pint of remaining berries whole or halved and lemon juice. Pour into a cooked pie shell or a graham cracker crust. Either will work. Garnish the top with additonal berries and chill for at least 3 hours. Serve with whipping cream or ice cream. Enjoy!
