Shoepeg Corn Salsa

I don't have a picture for this but you'll have to trust me it's good. Kelly gave me this recipe and though the ingredients may make you think otherwise, it's really really good.

Shoepeg Corn Salsa

 

  • 2 cans shoepeg corn, drained (sits near the regular corn at the store)
  • 2 cans chopped olives (I only do 1)
  • 1 bunch green onions – chopped
  • 1 green pepper – chopped
  • 1/2 can or less diced jalapeños, drained (I don't always put this in – but I
    did this time – yum!)
  • handful Roma tomatoes – chopped
  • 1 T Vinegar
  • 8oz Zesty Italian dressing (you can find the 8oz bottles occasionally, or just
    use half a reg bottle)
  • salt & pepper

combine, let chill for a few hours
