Pesto

Maddie and Tim went out and picked our basil tonight. The kids love pesto it's their favorite. I like to make it and freeze it to use on cold winters nights. It's a reminder of summer. We have it over linguini noodles with a bit of fresh parmesan cheese, we also love it on corn on the cob or in spaghetti sauce.  Here's a recipe that we sort of followIMG_3764

Pesto

  • 1 1/2 cups basil
  • 1 spoonful of crushed garlic
  • 1/2 cup nuts (originally we made this with pine nuts as was called for, but over the years we've used almonds, walnuts, and hazelnuts are really my favorite.)
  • 1/2 cup parmesan cheese
  • 1 Tbsp salt
  • 1/3 cup of  extra virgin olive oil (this is a rough estimation, you'll see why below)

Put all of your above ingredients except for the oil in your food processor. Process it until it is very fine. As it is running begin to add your olive oil through the top spout. You will know when you've added enough because the mixture will come together for lack of a better way to describe it. You really can't mess this recipe up. Enjoy!
