This is a recipe from Madeleine and its my favorite so far. It's a pain in the butt to roll the dough but these are delicious and worth the effort.
- 1 1/2 cups butter softened
- 1 cup powdered sugar
- 1 1/2 cups cornstarch (yes that's not a typo)
- 2 1/2 cups flour
Cream this mixure together. It will be crumbly. Roll into walnut size balls and place on greased cookie sheet or parchment paper. Bake at 325 degrees for 12-15 minutes. Do not brown.
Cool these on the cookie sheet. Don't try to move them they'll fall apart and shatter.
When cooled frost with:
- 1/4 cup butter
- 1/2 lb of powdered sugar (1 1/2-2 cups)
- Juice and zest of 1 lemon
Makes about 60 cookies and they won't last long trust me on that.
